Ingredients
50 g Spinach approx. 50g, blanched
2 Apples diced
3 Fresh mint leaves plus extra for garnish
1.5 Lemon Juice from 1.5 lemons. Adjust to taste for desired zinginess.
0.5 piece Avocado Half
0.5 piece Cucumber Half of a long cucumber cut into pieces
1 piece Medjool date cut into pieces
1 tbsp Milled chia seeds
1 tbsp Coconut milk A splash of coconut milk, adjust to the desired consistency.
Instructions
Prepare Ingredients: Start by blanching the spinach. To do this, boil water in a pot. Once boiling, add the spinach and let it cook for about 30 seconds to a minute. Then immediately transfer the spinach to a bowl of ice water to stop the cooking process. Drain and set aside.
Blend: In a blender, combine the blanched spinach, diced apples, fresh mint leaves, lemon juice, avocado, cucumber, Medjool date, milled chia seeds, and a splash of coconut milk.
Blend to Perfection: Turn on the blender and blend until the mixture is smooth and even. Depending on your blender's power and the consistency you prefer, this may take anywhere from 30 seconds to a few minutes.
Taste and Adjust: If the smoothie is too thick, you can add a little more coconut milk or water. Taste and adjust the flavor with more lemon juice if needed.
Serve: Pour the smoothie into a glass, garnish with a few fresh mint leaves on top for a beautiful presentation.
